Neck and Chuck Roll (Boneless)

Expose the back bones (Thoracic vertebrae) and neck bones (Cervical vertebrae)…

…by cutting back the neck and chuck chain muscle (Longus colli).

Cut along each side of the ribs.

Turn the muscle block around and cut through the back bone cartilage…

…and remove back and rib bones.

Remove the Atlas (1st cervical vertebra)…

…and remaining neck bones.
