Flank section without the bones or cartilage.

Start by removing the tip of the flank and follow the natural seam along the leg

until the tip of the eye muscle of the loin.

Follow the tip of the eye muscle (taking care not to cut into the eye muscle)

until the rib section. Cut along the rib upwards.

Follow the soft rib bone cartilage towards the breast bone and remove the flank.
